CAULIFLOWER & CASHEW KOFTA CURRY

For Gravy...take a pan, add oil, heat it, in goes dalchini, elaichi & sabit kali mirch, saute it for 10 sec. Add in onion, stir fry it for a minute. Add in green chilli, garlic & ginger, saute it for a minute, in goes tomato, salt & kaju, stir fry it for a minute. Now add haldi powder, dhania powder & red chilli powder, sprinkle lil water, stir it, cook it until tomato becomes mushy.

Turn off the flame, allow it to cool down, grind it to a fine paste, keep aside.

For Koftas...take a pressure cooker, add mustard oil, heat it, in goes onion, stir fry it until light brown.

Add in veggies & kaju, stir fry it for a minute. Add in ginger garlic paste, stir fry it for a minute.

In goes dhania powder, haldi powder, red chilli powder & garam masala powder, mix it well, sprinkle lil water, stir fry it for a minute.

Add in dhania patta, mix it well.

Now add 1/2 cup water, mix it well, place the lid, give 4 whistles on high flame, lower the flame, cook it for 5 minutes. Turn off the flame, allow it to depressurise naturally, open the lid after 5 minutes.

Now place the cooker on the low flame, mix the cooked veggies, mash them.

Add in besan, mix it thoroughly, turn off the flame, take out in a dish, allow it to cool down.

Take med sized portions, roll them good ve the shape of Koftas, keep aside. Take a wok, add oil, heat it, deep fry Koftas in batches till brown, take out in a dish, keep aside.

Now adjust the quantity of oil, heat it again, in goes ginger garlic paste, mix it well, sprinkle lil water, cook it until rawness is released.

Add in gravy masala, mix it well, add lil water, mix it well, cook it for a minute.

In goes salt,haldi powder, dhania powder, red chilli powder & kashmiri red chilli powder, mix it well, cook it covered on low flame until oil has oozed out.

Add dahi now, mix it well, lower the flame, cover it with the lid, cook it until oil has surfaced.

Add in kasoori methi & garam masala powder, mix it well.

Now add 1.5 cup hot water, mix it well, give a boil, cooknit covered on low flame until gravy turns a lil thick. Turn off the flame. Open the lid after 10 minutes.

Arrange the Koftas in a serving dish or bowl, pour gravy over it, garnish it with chopped dhania patta...
