Watermelon Jam is really nice, very sweet and enjoyable on bred or grab a piece out of the bottle as is.
Steps

Peel the thin green peel off of the rind, and most of the red soft flesh

Prick the white part of the rind all over with a fork. Cut the rind in 1.5cm to 2.5cm pieces (inch or less)

Let the rind soak over night in water, you could add food lime to the water, or equivalent, but this is optional to stiffen the pieces.

Rints the pieces well and boil for 15min - 20min

Add the sugar to new fresh water with the bruised ginger root and being too the boil

Add a pinch of salt if you want

Take out the boiled rind and add it to the syrup, and boil for 1 - 2 hrs
- 8
Sterilize bottles with hot water and add the Watermelon and syrup to the bottles, and seal. Let it cool down pack away until you want it.
Tips
This is what left of 2.5kg rind, so make sure you start with enough
