Veggie Casserole (Vegan)

I lalalalove a one-pot meal... well, let me not fib: this is a one-pot + one-pan + one-bowl. It’s just 3 dishes and a few spoons I promise! I like this meal b/c it’s relatively quick and lasts a couple of days (before it’s gone) so you don’t have to make a different meal every day. It’s cold and no one has time for all that. She’s packed with veggies, packed with fiber, and you control your protein baby. The beans are more than enough! However, some pan-fried chicken, beef slices, or baked fish also pair nicely. 😉

Make your noodles per the box to just al dente. Remove and cool with cold water to halt the cooking process. This is going in the oven we don’t want to overcook the noodles!

Preheat oven to 375 degrees.

Prep all your veggies and throw them in a large mixing bowl! I personally like a crunchy vegetable. If you don’t, sauté your veggies for a bit to pre soften them up before you bake everything! Or one more option you can roast/airfry your veggies in the oven while your noodles cook!

In a small pot over medium heat melt your stick of butter. Add in your flour and whisk. Oh yeah we’re making a little roux!

Pour in your milk, garlic -n- herbs seasoning, and cheese. Keep stirring until she’s melted.

Throw noodles into the veggie bowl pour cheese sauce over everything && give it a good mix!

Into a baking dish everything goes! Cover with some foil and bake for 40 minutes. I like to pour a little veggie broth in to keep everything moist!

After 30 minutes, remove the foil and cook for an additional 10 minutes.

Enjoy with some fresh bread, or alone!
Tips
I add a mixture of milk and heavy whipping cream for a perfectly creamy sauce.
I also make this with different veggies and noodles every time I make it. It’s a quick dish, I like to keep it easy! The main picture matches the recipe, the final picture is what I had in the fridge and freezer 😂!
