Lebanese Meghli Cake

Meghli (also called Mighli or Meghleh) is a traditional, spiced Middle Eastern dessert cream from Lebanon. Originally, meghli was a celebratory dessert to mark the birth of a child, symbolizing fertility and abundance. It is also served at Christmas to celebrate the birth of Jesus. The word "meghli" in Arabic means "boiled," referring to the long, slow cooking process needed to achieve a thick, creamy texture. Also known as Karawiyah in Syria and Jordan, there are small local variations, but the base remains the same. It is made by boiling rice flour with water or milk, sugar, anise seeds, fennel seeds, cumin, and cinnamon, then garnished with dried fruit and shredded coconut. This is a modern version inspired by Joellichouscuisine on Instagram, using the traditional meghli ingredients. My version is made with rice flour, potato starch, sugar, water, oil, eggs, orange juice and zest, soaked raisins, and powdered spices: cumin, anise, cinnamon, and fennel seeds. The warm cake is glazed with honey and topped with shredded coconut, chopped pistachios, walnuts, almonds, and hazelnuts.

Ingredients

  • Batter
  • 3eggs
  • 2/3 cupsugar (about 120 grams)
  • 1/2 cuphigh-oleic vegetable oil (about 120 ml)
  • 1/3 cupwater (about 80 ml)
  • 3 tablespoonsorange juice (about 50 ml)
  • 1 teaspoonground cinnamon and/or ground fennel seeds (I used both)
  • 1 teaspoonground anise
  • 1 teaspoonground caraway
  • 1 2/3 cupsrice flour (about 200 grams)
  • 1/3 cuppotato starch (about 50 grams)
  • 3 tablespoonssoaked raisins (about 30 grams)
  • For topping
  • 2 tablespoons honey (about 40 grams)
  • 13almonds
  • 13walnuts
  • 10hazelnuts
  • 2 tablespoonsshredded coconut
  • 2 tablespoonschopped pistachios

Steps

  1. 1

    Beat the eggs with the sugar until light and fluffy. Add the oil, water, orange juice, and orange zest.

    Sift together the flours with all the powdered spices and baking powder. Pour the mixture into a baking pan lined with parchment paper or greased and floured. Add the soaked and floured raisins. Bake in a preheated oven at 350°F (180°C) for 40 minutes. Check doneness with a toothpick.

    As soon as you take the cake out of the oven, glaze the warm cake with honey slightly heated with a tablespoon of water.

    Decorate with shredded coconut, chopped pistachios, almonds, hazelnuts, and walnuts.
