  • 1.1 lbsNorwegian salt cod (500 grams)
  • 5medium potatoes
  • 2 tablespoonschopped fresh parsley
  • 1small onion
  • 2 clovesgarlic
  • 2eggs
  • Black pepper to taste
  • Oil for frying

    Soak the salt cod in water for 48 hours, changing the water every 6 hours. Place the cod in a pot with water and boil for 15 minutes.

    Drain the cod, remove the skin and bones, and shred it. Set aside. Peel the potatoes and cook them in the same water used for the cod for about 12 minutes to add flavor.

    Place the cleaned cod on a clean kitchen towel, gather the ends, and squeeze out the moisture with both hands to dry and break it up further.

    Drain the potatoes in a colander, mash them in a bowl, and mix with the drained cod. Finely chop the garlic, onion, and parsley, and add them along with two beaten eggs to the mixture. Mix well, check for any remaining bones, and combine thoroughly. No need to add salt.

    Shape the mixture into fritters using a spoon, then fry them in a skillet with oil.

    Serve the fritters as an appetizer. (Cod à Brás is the next recipe.) Enjoy with a good white wine. Enjoy!
