  • 1 Pound+ Golden Baby Potatoes [left whole but halved if needed]
  • 1 Pound+ Red Baby Potatoes [left whole but halved if needed]
  • 1Medium Vidalia Onion [quartered]
  • 1Medium Red Onion [quartered]
  • 1 CupFresh Mushrooms [sliced]
  • 1 CupBaby Carrots [halved]
  • 1LG Stalk Fresh Sliced Celery
  • 6LG Cloves Fresh Garlic [smashed & fine minced]
  • 1/4 CupFresh Parsley Leaves
  • 1 CupFresh Cherry Tomatoes
  • 1/2 tbspFresh Thyme Leaves [fine minced]
  • 1LG Sprig Fresh Rosemary [fine minced]
  • 1 tbspFresh Ground Black Pepper
  • 1 tbspFresh Cracked Sea Salt
  • 1 tspHerbs De Provonce
  • 1 tspRed Pepper Flakes
  • as neededGarlic Olive Oil
  • 1/4 CupQuality White Wine
  • 1/4 CupChicken Stock [only if needed at 30 minutes in]
  • ● For The Garnishments
  • as neededFresh Parsley
  • as neededFresh Chives
  • ● For The Optional Incorperations [add directly to pan]
  • as neededThick Chicken Strips
  • as neededSliced Sausage
  • as neededThick Beef Strips
  • as neededThick Pork Chops
  • ● For The Kitchen Equipment
  • as neededTinfoil Sheets
  • 1LG Disposable Aluminum Pan

Steps

75 Minutes
  1. 1

    Preheat oven to 400°. Chop all vegetables and herbs and coat with olive oil. Add wine as well.

    Seal pan tightly with tin foil. Bake for 60 minutes stirring once at 30 minutes and covering again. Add cherry tomatoes and/or chicken broth if needed at your 30 minute mark. Check carrots for doneness. They're your best indicator.

    At 60 minutes uncover, stir and bake for 10 additional minutes to burn off fluids.

    Know this dish makes for excellent lunches the following day.

    Plate and garnish dish with fresh chopped chives and fresh parsley. Also, slice your meats in thin strips if opting for them. Enjoy!

Hense my love for the year round super fresh meats, seafoods and crispy fresh vegetables my students have consistently listed for your families picky approval!With that, cooking, teaching and feeding others are obviously 3 of my absolute passions in life. My culinary specialties as an easy going Chef include Asian, Mexican, Cajun, BBQing, Grilling, Irish Pub food, Low Country foods, anything seafood related, extra spicy foods, fresh meat, extra fresh vegetables, US comfort, kid friendly and super fast, quick and easy foods.
