Ingredients

30-40minutes
4 servings
  1. 1/4 cupoil
  2. 1-2onions, sliced
  3. 1 tbsp.ginger-garlic paste
  4. 1tomato, chopped
  5. To taste, salt
  6. 1 tsp.chilli powder
  7. 1/2 tsp.turmeric
  8. 1 tsp.cumin powder
  9. 1/2 tsp.pepper powder
  10. 3-4potatoes, cubed
  11. 3carrots, sliced
  12. 1 cupfrozen peas
  13. 1 cupfenugreek leaves, washed
  14. 1/4 cupwater
  15. 1 tbsp.ginger, chopped
  16. 1 tbsp.cilantro, chopped

Steps

30-40minutes
  1. 1

    Heat oil in a heavy bottom pot over high heat.

  2. 2

    Add the onions and sauté till light golden.

  3. 3

    Add ginger-garlic paste and fry for 4 minutes.

  4. 4

    Add the tomato and cook till soft.

  5. 5

    Add the powdered spices and fry with a splash of water for 2-3 minutes.

  6. 6

    Add the vegetables and mix well.

  7. 7

    Add water, mix; cover and simmer till vegetables are tender.

  8. 8

    Add ginger and cilantro and mix well.

  9. 9

    Serve hot with roti or paratha.
