Tricolour Pearl Couscous with lots of freshly chopped Vegetables is such a delightful bliss every Winter when all the different Vegetables are easily available and can be procured from the local markets.
This simple yet a filling Salad is such a crowd pleaser and also a stunner. It's absolutely healthy and can be made in a jiffy. There is no trouble of extra long hours of standing in the kitchen and getting tired. It's such a beautiful one. And to make it or whip it up is so so easy and effortless. It's actually a breeze.
With a simple Olive Oil dressing, it's a winner all the way. Couscous is a great option for a good and a healthy homemade food. Pearl and Moroccan Couscous both are made with Semolina and water. For Pearl Couscous, Semolina is toasted before the Couscous is dried, that is the reason why it has a bit more of nuttiness.
Couscous is a powerhouse of Fiber. It keep you full and is good for stabilized blood sugar levels. It also aids in digestion and relieves constipation. Pearl Couscous is low in Sugar and hence has a low glycemic index too.
Pearl Couscous is technically a larger version of Moroccan Couscous. Roughly the size of a Pea, it is larger than the other Couscous varieties like the Moroccan. While many believe it's a type of grain, it is actually a type of Pasta. Sago or Sabudana is completely different from it.

Ingredients

  1. 1 cupTricolour Pearl Couscous
  2. 1 tspSalt
  3. 1 tspBlack Pepper powder
  4. 1finely chopped Orange Carrot
  5. 1finely chopped Red Carrot
  6. 1large finely chopped Cucumber
  7. 1-2finely chopped Tomatoes
  8. 1-2finely chopped Onions
  9. 1 stalkchopped Spring Onions
  10. 1/2 cupgrated Cabbage
  11. For the dressing -
  12. 2 tbspOlive Oil
  13. 2 clovesminced Garlic
  14. 2 tbspLemon juice
  15. 2-3 tbspchopped Coriander or Parsley Leaves

    Bring 2 cups of water to a boil. Add couscous to it. Boil for 2-3 minutes and take it off the heat. Cover and keep it aside for about 20 minutes.

    Meanwhile get ready with the rest of the ingredients as mentioned. Add them all to a serving bowl. Keep the dressing ready as well by mixing all the ingredients mentioned under it.

    Now add the well cooked couscous to the bowl. Drizzle the dressing over it. Mix well until combined. Serve immediately. Enjoy!
