▪︎ Dry roast melon seeds, poppy seeds, fennel & pepper until aromatic. Cool.
▪︎ Soak almonds 10 mins in hot water, peel.
▪︎ Grind everything into a fine powder.

2️⃣ Date Paste:
▪︎ Soak dates in warm (not boiling) water 20–30 mins.
▪︎ Blend to smooth paste.
▪︎ Add little soaking water if needed.
▪︎ Refrigerate (keeps 4–5 days). - 6

3️⃣ Saffron Milk:
▪︎ Add saffron to hot boiled milk.
▪︎ Cover & infuse 20–30 mins.

4️⃣ Final Thandai:
▪︎ Add premix + date paste to cooled saffron milk.
▪︎ Blend well.
▪︎ Strain for silky texture.
▪︎ Chill 1–2 hours.
▪︎ Garnish & serve. - 11

• Use water (not milk) for longer storage.
• Cool milk fully before adding date paste.
• Strain once for smooth festive finish.
• Adjust sweetness as per preference.
• Royal Crown dates are semi-soft — soaking helps.
