  • 1red onion (or yellow onion)
  • 1 teaspoonbrown sugar
  • 1 tablespoonbalsamic vinegar
  • as neededExtra virgin olive oil,
  • as neededSalt and pepper,
  • as neededFresh thyme or fresh oregano or oregano,
  • as neededRustic bread for the croutons,
  • as neededShaved Parmesan or Pecorino cheese,

20 minutes

    Caramelize the onion: Slice the onion and sauté it in a skillet with a drizzle of olive oil.

    Add the brown sugar and balsamic vinegar.

    Cook over low heat until the onion is soft and glossy.

    Prepare the croutons: Toast slices of bread in a skillet with a drizzle of olive oil until golden and crispy.

    Cook the eggs: In the skillet with the onions, make spaces and crack in the eggs.

    Cover and cook over low heat until the whites are set but the yolks are still soft.

    Add salt, pepper, and fresh thyme.

    To serve: Place the eggs on a plate, add the croutons, and, if you like, some shaved cheese.
