Wash the snails very well several times with water and salt.

Place them in a large pot with water.

Add garlic, cumin, anise seeds, thyme, bay leaf, mint, salt, and pepper.

Bring to a boil, then cook on medium heat for 60–90 minutes.

Serve hot with some of the flavorful broth
