Steps

Boil the potatoes in a cooker. Ready all the dough ingredients.

Knead a stiff dough using water as needed. Rest the dough for 30 minutes.

For Fresh Paste: Ready all the ingredients. Cut ginger into julienne cuts. Pound 2 chillies and garlic with some salt

Add in coriander and jira and pound to a coarse crude paste.

Keep the paste aside.

For Bhaji: In 2tsp oil take rai and when it splitters add in chopped coriander stems. Saute for 2-3 minutes, stirring continuously. Do not burn. Add in haldi and salt.

Add some water and bring to a boil. Add in boiled potatoes hand crumbled crudely.

Mix. Add in some more water and set a saucy consistency. Add in s 1 slit green chilli. Cook for 2 minutes. Switch off gas and add in lemon juice and some coriander. Mix.

For Poori: Make portions of the rested dough. Roll out pooris

Heat oil and deep fry the pooris.

Drain and take out the poori. Fry all. Serve with a smile this Gudi Padwa to your beloved family.
