Cut the pumpkin into cubes and boil it well.Drain the water and make a fine paste or puree wit a fork or mixer.Mix together flour,boiled pumpkin,salt turmeric powder, chilli powder, cumin seeds powder in a bowl knead into astilf dough with a little water or oil if necessary and keep covered for 20minutes.

Cut small lechi from the kneaded dough.Grease it with little oil and roll the puries into rounds.Heat oil in a pan.When the oil is hot and puries over medium heat and fry them gently until golden brown on both sides and remove.

Pumpkin Puri is ready.

To make it vegetables into small pieces.

Heat oil and cumin seeds in a pan and stir fry the vegetables.It is prepared by steaming covering with a lid and cooking on low heat with turmeric powder and salt and a few spices.Mixed vegetable bhaji is ready.
