Chicken in Creamy Mushroom Sauce with Buckwheat
My twist on a polish dish I love to make as a midweek dinner

Soak dried mushrooms in warm water for 15 min. Strain, reserving 100ml soaking water.

Season chicken with meat seasoning, lovage, and white pepper. Chill 30 min if possible.

Heat oil in a pan. Sauté onion until soft and golden.

Add chicken, cook until lightly browned.

Add both mushrooms. Stir and cook for 2 min.

Pour in mushroom water and chicken stock. Cover, simmer 20 min.

Mix cream with flour. Stir into pan, simmer until sauce thickens.

Season with salt and parsley. Serve with cooked buckwheat and gherkins on the side.
Tips
Serve with gherkins on the side for a punchy contrast to the creamy sauce. Great with boiled or mashed potatoes
