Breaded Squid with Garlic and Parsley

A few days ago, we bought a kilo of squid and cut half of it into bite-sized pieces. We simply coated them in flour, egg, and garlic-parsley breadcrumbs, fried them up, and served them with a little salad.

A few days ago, we bought a kilo of squid and cut half of it into bite-sized pieces. We simply coated them in flour, egg, and garlic-parsley breadcrumbs, fried them up, and served them with a little salad.

Cut the squid into pieces and pat dry.

Set up three bowls: put flour in one, beat the egg with salt in the second, and put the breadcrumbs in the third.

To keep your hands clean, use three sets of tongs to bread the squid.

Dredge each piece of squid in flour, then dip in the beaten egg, and finally coat with breadcrumbs. Place the breaded pieces on a wire rack or tray so the coating stays crisp.

Before serving, heat plenty of oil in a skillet over medium heat. When hot, fry the squid in batches.

Transfer the fried squid to a plate lined with paper towels to absorb excess oil.

Serve hot.
