Ingredients

30 minutes
10 persons
  1. 1 cupzero number rava,(fine semolina.)
  2. 1/2 cupghee + 2 tsp ghee (clarified butter)
  3. 3/4 cup sugar (can be reduced or increased according to taste)
  4. 1 and 1/2 cup milk + 1 cup water
  5. Pinch of salt, few strands of saffron, 1/2 tsp cardamom powder
  6. 1/4 cup blanched and ground almond powder
  7. 1 ripe banana
  8. 12 to 14 Indian dried apricot (soak them in a bowl of warm water for 4 - 5 hours, cut into small pieces after remove pits)
  9. For garnishing, sliced or finely cut almonds, pistachios and cashewnuts, some whole raisins

Steps

    Heat pan. Add ghee on low heat. Add banana slices and fry for a few minutes.

  2. 2

    Then add semolina and roast it on low to medium heat till it changes its color. It may take 15 minutes or so.

  3. 3

    In another pan keep water and milk mixture for boiling.

  4. 4

    Grind the saffron in a mortar or pestle and add it to the milk mixture.

  5. 5

    Once the semolina is roasted properly, add the hot water milk mixture. Keep stirring to avoid forming of lumps.

  6. 6

    At this stage, add a pinch of salt, almond powder and cut apricot in the mixture.

  7. 7

    Once the liquid dissolves then add the sugar, cardamom powder, some whole raisins. Heat it for few minutes. Then turn off the stove. Add 1 or 2 tsp ghee to get good flavor. Mix it well.

    Garnish with sliced almonds, cashews and pistachios.

  9. 9

    Serve this yummy dessert hot for better taste.

Tips

Roast semolina till golden color. When add milk keep stirring to avoid lunch.
