Ingredients

Prep 10 min, cook 15 min
Serves 2 servings
  1. 4white fish fillets (such as cod, sole, sea bass, etc., skin removed)
  2. 1 cupgrated Parmesan cheese (about 100 grams). If you use another cheese, adjust the salt depending on how salty it is
  3. 1 cupbreadcrumbs (about 60 grams), preferably panko
  4. 2 tablespoonsolive oil (plus 1 tablespoon for drizzling)
  5. 1 teaspoongarlic powder
  6. 1 teaspoonpaprika, sweet or hot (optional)
  7. Salt and black pepper. Reduce the salt if using salted or previously salted cod
  8. Chopped fresh herbs (such as parsley or dill)
  9. Fresh lemon for serving

Steps

Prep 10 min, cook 15 min
  1. 1

    Chop the dill and remove the skin from the fish, then cut into fillets. This is the main prep work.

    Gather the rest of your ingredients.

    In a bowl, mix the grated Parmesan, breadcrumbs, garlic powder, paprika, salt, pepper, and dill. Reduce the salt if using salted or previously salted cod.

    Brush or rub the fillets on both sides with a little olive oil to help the crust mixture stick.

    Carefully coat each fillet in the crust mixture, pressing gently so it sticks to the fish.

    Place the fillets on a baking sheet lined with parchment paper.

    Drizzle a few drops of olive oil over the top.

    Bake in a preheated oven at 400°F (200°C, convection) for 15–20 minutes, depending on the thickness of the fillets, until golden and crispy.

    Serve hot, with fresh lemon and a sprinkle of chopped herbs.
