Traditional Gujarati Rice Panki is a light, thin, steamed pancake made from fermented or instant rice flour batter, cooked between greased banana leaves. This snack recipe is a great dish to serve at parties or with evening tea. Rice Panki is super easy to make. Enjoy this aromatic dish hot with green chutney or pickles.

First of all, cut the banana leaves into small equal pieces, wash them and dry them. Also make garlic butter. For this, in a bowl, add finely chopped garlic and finely chopped green coriander leaves to melted butter and mix to prepare garlic butter.

First of all, add rice flour in a bowl, add turmeric powder, asafoetida, salt, garlic ginger green chili paste, green coriander leaves, curd, oil and mix very well.

Now add water little by little to this mixture and mix it in such a way that there are no lumps and make a thin batter. (The batter should be thinner than the batter of dosa) Then cover this batter and keep it aside for 15 to 20 minutes.

Now heat a non-stick pan..till then apply oil on the sine part of two banana leaves. Now place these banana leaves on the hot pan and spread 2 to 3 tbsp of batter on greased side of banana leaf and make a thin layer. Then tadd garlic butter and grated cheese on top.

Now cover with another banana leaf. Then cook on a non-stick tawa on both sides till the panki is done. Brown spots will come on the leaves. The panki must come out easily.

Now our very yummy and delicious Traditional Gujarati Rice Panki is ready for serve. Then Garnishing this panki - sprinkle red chili powder, roasted cumin powder and black salt powder on the panki. Serve immediately with green coriander chutney and tomato sauce.
