First, add buttermilk to a bowl, add gram flour and water to it and beat it with a hand beater.

Now heat ghee and oil in a pan, add cumin seeds and when they crackle, add asafoetida, cloves, sweet curry leaves, dry red chillies, finely chopped dry onion, green chilli ginger garlic paste, finely chopped green garlic and cook till the onion turns slightly pink in colour.

Then add finely chopped spring onions and finely chopped green fenugreek leaves to this, mix well and sauté on medium flame for 2 minutes. Add salt to it, cover the lid and cook again for 2 minutes.

Now add turmeric powder and mix well. Then add buttermilk with besan batter to this and let it boil properly.

Now when the curry starts to 1 boil, add jaggery or sugar and cook it for 3 times till it starts to boil until it thickens. Now add finely chopped green coriander leaves and mix well. Then after turn off the gas stove.

Now our delicious spring onion kadhi is ready to serve. Garnish this kadhi with spring onion leaves and green coriander leaves.

Tips
1) If you prefer a savory version, you can skip the jaggery, but it won't have the signature Gujarati flavor.
2) If the kadhi thickens too much after cooling, stir in a little warm water before reheating.
3) The kadhi should be slightly thicker than regular gujarati kadhi.
