Heat oil in a pan on medium flame. Add mustard seeds and hing.

When mustard seeds crackle, add tomato pieces. Sauté until oil releases.

Mix all masala powders with a little water in a bowl to make a paste.

Add masala paste to tomatoes and sauté for 1 minute.

Add boiled lauki, jaggery, and imly ki meethi chutney. Mix well.

Add 1/2 cup water, stir, and cook for 3 minutes.

Garnish with fresh coriander leaves and serve. Ready tasty Lauki Tomato Subji.
Tips
Adjust the sweetness by varying the amount of jaggery and chutney according to your taste.
