Ingredients

3 cup
  1. 2 cupsBoiled lauki (bottle gourd) pieces
  2. 2 cupsTomato pieces
  3. 2 tablespoonsImly ki meethi chutney
  4. 1 tablespoonJaggery pieces
  5. 1/2 teaspoonTurmeric powder
  6. 2 teaspoonsCumin-coriander powder
  7. as per taste Chilli powder
  8. as per taste Salt
  9. 1/2 cupWater
  10. 2 tablespoonsOil
  11. 1 teaspoonMustard seeds
  12. 2 pinchesHing (asafoetida)
  13. 1/2 teaspoonGaram masala
  14. leavesfor garnish Fresh coriander

Steps

  1. 1

    Heat oil in a pan on medium flame. Add mustard seeds and hing.

  2. 2

    When mustard seeds crackle, add tomato pieces. Sauté until oil releases.

    Mix all masala powders with a little water in a bowl to make a paste.

    Add masala paste to tomatoes and sauté for 1 minute.

    Add boiled lauki, jaggery, and imly ki meethi chutney. Mix well.

    Add 1/2 cup water, stir, and cook for 3 minutes.

    Garnish with fresh coriander leaves and serve. Ready tasty Lauki Tomato Subji.

Tips

Adjust the sweetness by varying the amount of jaggery and chutney according to your taste.
