Heat a little coconut milk in a pan, add both curry pastes, stir and fry until the oil splits.

Add chicken thighs, stir to coat in the paste.

Add potato, red pepper, red onion, and gado gado sauce, mixing well.

Pour in the rest of the coconut milk, bring to a simmer with a lid.

Add brown sugar and fish sauce. Simmer until potato is tender and chicken is cooked.

Add spring greens just before turning off the heat, letting them wilt.

Stir in chopped coriander and lime juice. Taste and adjust using sugar, fish sauce or lime juice as needed.

Heat jasmine rice packets according to package instructions.

Serve curry over jasmine rice with a lime wedge.
Tips
Adjust the amount of fish sauce, sugar and lime juice to balance the dish.
