Ingredients

4 servings
  1. 1 jar(about 100g) Massaman curry paste
  2. 2 tbspRed curry paste
  3. 150 mlGado gado sauce (leftover from roasting tin book recipe)
  4. 200 mlCoconut milk (leftover from roasting tin book recipe)
  5. 1(about 150g) cut into chunks Potato
  6. 200 gcut into pieces Chicken thighs
  7. 1chopped Red pepper
  8. 1/2sliced Red onion (half, leftover)
  9. 4roughly chopped Spring greens leaves
  10. 1 tbspBrown sugar
  11. 1 tbspFish sauce
  12. 1(juice for sauce, 1/2 cut into wedges for serving) Lime
  13. 2 tbspfinely chopped Coriander (slightly wilted)
  14. 2 packsJasmine rice (microwave packets)

Steps

  1. 1

    Heat a little coconut milk in a pan, add both curry pastes, stir and fry until the oil splits.

  2. 2

    Add chicken thighs, stir to coat in the paste.

  3. 3

    Add potato, red pepper, red onion, and gado gado sauce, mixing well.

  4. 4

    Pour in the rest of the coconut milk, bring to a simmer with a lid.

  5. 5

    Add brown sugar and fish sauce. Simmer until potato is tender and chicken is cooked.

  6. 6

    Add spring greens just before turning off the heat, letting them wilt.

  7. 7

    Stir in chopped coriander and lime juice. Taste and adjust using sugar, fish sauce or lime juice as needed.

  8. 8

    Heat jasmine rice packets according to package instructions.

  9. 9

    Serve curry over jasmine rice with a lime wedge.

Tips

Adjust the amount of fish sauce, sugar and lime juice to balance the dish.
