Mint or Pudina is available in abundance during the summer season.So these flavourful leaves can be incorporated in various dishes.Mint paratha is one such recipe of Indian flatbread which turned out flaky, crispy and delicious. You can make these parathas either in square, triangle shapes or can make it as lachcha paratha as well.Incorporating some spices in the wheat flour, chopped garden fresh mint leaves, along with some coriander to enhance the flavor, minced garlic and onion give a nice aromatic touch to the recipe.These parathas taste absolutely delicious on their own , but if accompanied with some raita, mixed pickle, some gravy dish like Paneer Tikka Masala,Dal Makhani or any chicken with gravy will enhance the taste.I served it with Aloo Matar Ghugni ( White Peas Potato Curry) drizzled with tamarind chutney and onion. Serve these parathas in breakfast, lunch or dinner and relish !

Ingredients

Prep Time : 20 minutes Cook Time: 20 minutes

  • 1 cupwhole wheat flour
  • 1/2 cupAll-purpose flour
  • 1/2 cupfresh mint leaves chopped
  • 1/4 cupcoriander chopped finely
  • 2green chillies chopped finely
  • 1/2 tspred chilli flakes
  • 1/2 tsproasted cumin powder
  • 1/4 tspturmeric powder
  • 1/2 tspchaat masala
  • 1/2 tspsalt or to taste
  • 1 tspsesame seeds
  • 1/4 tspcumin seeds
  • 1/2 tspcarom seeds (ajwain)
  • 1/4 tspasafoetida
  • 2 tsprefined oil or ghee
  • 1small onion chopped finely
  • 3 clovesgarlic minced finely
  • As neededoil for frying
  • 1/2 cupwater or as needed to knead the dough

Steps

Prep Time : 20 minutes Cook Time: 20 minutes

    Wash and chop mint and coriander leaves finely. In a bowl, measure 1 cup atta (Indian Whole Wheat Flour) and half cup All-purpose flour. Add salt, 2 tsp oil or ghee and mix well.Now add chopped mint and coriander leaves, minced garlic, chopped onion, red chilli flakes and finely chopped green chillies, cumin, turmeric and chaat masala.Add carom (ajwain), cumin and sesame seeds.Also add asafoetida.Mix well.

    Add water gradually and knead to form a soft and smooth dough.Cover and set aside for 15 minutes.After the dough has rested, divide it in 5-6;equal parts.Roll the dough balls and flatten them with the palm of your hand.

    Preheat a non-stick pan on medium heat.Smear little oil on both sides of the dough balls and roll them out. Smear few drops oil on the surface of the rolled dough.Now to get the triangle shapes, first fold it into a semi-circle.Then fold the semi-circle into half again. Now a mini triangle is formed.

    Brush 2 drops oil on both sides of the triangle.Roll it out gently into a larger triangle. Repeat the same process with rest of the dough balls.With skillet on medium heat, place one rolled out dough triangle on it.Roast till air bubbles form on the surface. At this point flip the paratha and smear 1/2 tsp ghee or oil.Roast on both sides similarly pressing with a spatula till brown spots appear and surface is crispy.

    Remove from heat and place on a platter.Continue the same process with rest of the rolled dough balls.Serve hot as it is or with raita, pickles or any gravy of choice in breakfast, lunch or dinner and relish !

Tips

To make mint ( pudina) paratha , it is very important to knead the dough soft and smooth.Another key point to make layered and crisp pudina paratha, roll the dough ball and brush oil or ghee between the layers while folding.It is also important to use fresh mint leaves and spices to make flavourful mint paratha.However, adding onion and garlic are optional. You can also avoid maida and use only wheat flour.
