Brinjal Fry, also called Baingan Fry and known in Marathi as Vangyache Kaap, is a simple Maharashtrian Konkan style side dish made with sliced brinjal coated in ground spices and rava (sooji). The slices are pan-fried until crisp and golden on the outside while remaining soft inside. This recipe uses minimal ingredients and comes together quickly. It pairs well with dal-rice, khichdi or everyday meals. Serve this Baingan Fry as a vegan side dish with dal, rice or khichdi.

Brinjal Fry, also called Baingan Fry and known in Marathi as Vangyache Kaap, is a simple Maharashtrian Konkan style side dish made with sliced brinjal coated in ground spices and rava (sooji). The slices are pan-fried until crisp and golden on the outside while remaining soft inside. This recipe uses minimal ingredients and comes together quickly. It pairs well with dal-rice, khichdi or everyday meals. Serve this Baingan Fry as a vegan side dish with dal, rice or khichdi.

Rinse and then slice brinjal in round slices having 0.5 cm thickness.

In a large bowl take enough water. Then add ½ tsp salt and mix. Soak the brinjal slices for about 10 minutes. The brinjal slices should be immersed in the water.

Later drain all the water and take the brinjal slices in a large plate or tray.

Now in a small plate add ginger garlic chilli paste, turmeric powder, garam masala powder, Kashmiri red chilli powder, coriander cumin powder, salt, asafoetida and lemon juice. Mix it very well.

Now coat the spices evenly all over the brinjal slices. Take rava in another plate. Also heat oil on a tawa or frying pan. Take each slice and place it on the rava. Evenly dredge and coat the brinjal slice with the rava. Dust of excess rava by gently tapping the slice.

Place the brinjal slices on the frying pan or tawa. Fry on medium heat. Let one side become crisp and light golden. Then turn over and fry the second side till it becomes crisp and light golden. Flip a couple of times more for even frying.

Remove the fried brinjal slices and place them on kitchen paper towels.

Now our yummy and delicious Maharashtrian style Baingan Fry is ready for serve. Then garnish with chopped green coriander leaves. Serve brinjal fry hot or warm as a side dish with khichdi or dal-rice.

Tips
1) To bring some variation, you can add a bit of gram flour while marinating the brinjals.
2) For a healthier option, choose to grill/bake or air-fry the brinjal.
