Makai no Mitho Chevdo (also known as Lili Makai no Chevdo) is a beloved, traditional Gujarati monsoon snack made from grated sweet corn slow-cooked in milk and tempered with aromatic spices. This dish perfectly balances the natural sweetness of corn with a touch of sugar, and a green chilli 🌶️ and ginger 🫚 .

Makai no Mitho Chevdo (also known as Lili Makai no Chevdo) is a beloved, traditional Gujarati monsoon snack made from grated sweet corn slow-cooked in milk and tempered with aromatic spices. This dish perfectly balances the natural sweetness of corn with a touch of sugar, and a green chilli 🌶️ and ginger 🫚 .

Firstly take 1 cup frozen sweet corn 🌽 add water and boil and give 2 whistles.

Now open the cooker and take the corn and drain excess water.

Now in a chopper chop the boiled sweet corn coarsely

Now take a kadai heat oil add rai.Let the rai splutter after that add white til and the ginger chili paste. Stir for 30 seconds until fragrant. Now add the grated sweet corn.

Add the turmeric powder, Red chili powder and salt.Now give a mix and add milk.

Let the mixture slow-cook on low heat for 8 to 10 minutes. Add sugar and stir occasionally to prevent the corn from sticking or scorching at the bottom. The chevdo is ready when the corn turns tender and absorbs most of the liquid, leaving a moist, creamy texture
