Basic staple marinade recipe for any beef stir fry. This marinade sets a nice base for the beef without overpowering it with flavor so the cooking sauce can come through.

Basic staple marinade recipe for any beef stir fry. This marinade sets a nice base for the beef without overpowering it with flavor so the cooking sauce can come through.

Slice beef thinly against the grain (about 1/8 inch thick or thinner).

Place beef in a mixing bowl.

Add soy sauce, Shaoxing wine, sugar, cornstarch and salt.

Toss or massage the beef until evenly coated with the marinade.

Marinate for at least 30 minutes or up to overnight in the refrigerator.

Remove from refrigerator and allow to stand at room temperature for 15 minutes. Add sesame oil and gently massage through.

Cook the beef in your favorite stir fry recipe.

If adding vegetables, cook the veggies separately first, then add to beef to combine.

If adding a stir fry sauce, pour it in at the end and toss until everything is evenly coated and heated through.
Tips
Storage: marinated uncooked beef can be kept in refrigerator up to 24 hours before cooking.
