Rajgira flour is a highly nutritious plant protein . It is a super food , naturally naturally gluten - free , boosts digestion, helps in anemia, helps in strengthening bones etc.It is widely used for fasts when items like savory pancakes, sheera , soft rotis , puris & bhakri are made from it . As it lacks elasticity when used on its own , other flours have to be mixed with it to make delicious & wholesome recipes.

Steps

Combine all the ingredients & mix very well.

Now slowly add warm water & knead to a firm medium soft dough. Make 10 - 12 small portions from the dough.

Roll each portion into small bite size puris. Cut into proper rounds with a round biscuit cutter. Pierce the puris with a fork, so they do not puff up while frying.

Heat oil very wel l. Fry a few puris very well till nice & golden from all sides. Press them while frying with a perforated skimmer (Jhara) so they don't puff up.

Remove these golden puris on a kitchen napkin. Cool them completely.Store in an airtight container.

Serving options : 1) You can place 5 puris in a plate & top it up with a dollop of Shrikhand..2) Place farali sukhi potato bhaji on top of each puri, put a drop of sweet tamarind chutney & green chutney on top & sprinkle farali chivda (for crunch) on top..3) As these are masala puris, serve them with a hot cuppa of tea / coffee as an afternoon snack.
Tips
1) These puris with a dollop of Shrikhand was our favourite after school snack .
2) Always use ghee for moin to make the puris crispy.
3) Fry the puris on slow flame for best results.
4)Knead the dough.very well & re - use the cut out dough to make more puris .
5) These puris tastes good on it's own also as masalas are added in it .
6)Puris without masala can also be made & they taste equally good.
