Ingredients

  • 1 CupSpinach leaves
  • 1Egg
  • 2 TablespoonsOil
  • 0.5 CupApple Sauce , Unsweetened
  • 0.5 TeaspoonSalt
  • 0.5 TeaspoonBaking Soda
  • 1 TeaspoonBaking powder
  • 1.5 CupsPlain Flour
  • 2 TeaspoonsVanilla Essence
  • 0.3 Cupsugar

Steps

  1. 1

    Steam you spinach and let it cool. Then, in a food processor or a blender mix together the spinach, eggs, applesauce, vanilla essence, sugar and oil. Pour into a large bowl.

  2. 2

    Put all the other ingredients in to another bowl and mix well.

  3. 3

    Now slowly mix the the dry ingredients into the wet mix. Combine well.

  4. 4

    Scoop into a lined muffin tin and bake for 12 minutes in an oven pre heated to 350 degree Fahrenheit.

  5. 5

    You can substitute the spinach for other veggies too. Remember to steam them first though.
