No Butter Sesame Banana Cookies
I am going through a sesame-obsessed phase and when I came across this recipe, I jumped at it. You can try this with peaches, applesauce, and even pumpkins.
Steps
- 1
Combine the sweet rice flour, powdered sugar, and banana mash in a medium bowl. Knead it together until it forms a soft dough (Just a little bit more moist than the consistency of playdough – if it’s too dry, add a tiny bit more water).
- 2
Divide the dough into 18-20 1-inch balls and flatten each into a 1½ – 2″ disk.
- 3
Spread the sesame seeds out on a small plate and press both sides of each disk into the sesame seeds.
- 4
Place them on a nicely greased baking tray. Bake for 10 minutes, and then under the broiler for 2 minutes to crisp.
- 5
Alternatively, you can heat a thin layer of vegetable oil in a medium skillet over medium heat. Fry each disk for 2-3 minutes on each side, until lightly golden brown.
- 6
Nom nom nom.
