  1. 500 gcooked crabmeat / 17½ oz .
  2. 150 gwhite fish / 5 oz .
  3. 100 gshallots (chopped) / 3½ oz .
  4. 300 mlfish stock / 10 oz .
  5. 300 mlmilk skim / 10 oz .
  6. 4 tablespoonslow fat crème fraîche
  7. 2 tablespoonstomato purée
  8. ½ teaspooncayenne pepper
  9. 1 tablespooncornstarch cornflour /

    Microwave the fish for 3 minutes with a little of the skim milk. Microwave the shallots for 2 minute. Put a saucepan on high heat and add: the stock; the milk; the fish; the onions; ⅔ of the crab; and the tomato purée. Stir the pan to mix. Blend the cornstarch with a little water (adding slowly) and then add the blended cornstarch to the pan as it just starts to bubble.
