Ingredients

7-serving
  1. 1 - 2 cupsbesan chickpea flour /
  2. 1 tablespoonsugar
  3. 1 cupwater lukewarm
  4. 1 teaspooncurd citric acid /
  5. 1 tablespoonchili ginger paste
  6. 1/2 teaspoonturmeric
  7. 1 teaspoonoil
  8. to tastesalt
  9. 1 teaspoonenos alt
  10. 1 teaspoonmustard
  11. 1/2 teaspoonjeera
  12. 1 tablespoonchana dal
  13. 1/2 tablespoonurad dal
  14. 1 sprigcurry leaves
  15. pinchasafoetida hing / a
  16. 3 - 4 numberschillies red dried
  17. 1 - 2 tablespoonspeanut roasted
  18. 2 - 3coconut grated roasted tablespoo
  19. 1/4 cupcoriander leaves fresh chopped
  20. 1 tablespoonghee

Steps

  1. 1

    Make a dosa like batter from besan with water after adding ginger chili paste,citric acid or curd with sugar. Let it rest for atleast 20 mins.

    Keep a round or square tin greased and ready. Either you can use pressure cooker without whistle or a steamer. I prefer the second.

  3. 3

    When batter ready,add turmeric, salt,and mix. Before pouring it add the eno salt abd stir quickly.

  4. 4

    Pour the mixture and put on a ring in the steamer fillwd with enough water to sit covered without opening.

  5. 5

    Steam closed on a low fire for minimum 25 minutes without opening.

  6. 6

    Cool it. Make the seasoning with the mentioned ingredients and garnish with roasted ccoconut and coriander.

  7. 7

    Serve hot cut into cuwith mint or tomato chutney!
