Wholewheat Lemon butter cookies

I made this using Martha Stewart's recipe available online. They came out lovely. She uses all purpose flour/ maida but I quite strongly oppose the use of maida in bakes as it is not the healthiest. So, here I use whole wheat flour instead. They taste good!

I made this using Martha Stewart's recipe available online. They came out lovely. She uses all purpose flour/ maida but I quite strongly oppose the use of maida in bakes as it is not the healthiest. So, here I use whole wheat flour instead. They taste good!

Mix the dry ingredients in a bowl, that is, whisk together flour, baking soda, salt and lemon zest.

In another bowl, beat the sugar and butter together till it's fluffy. You can use a whisk or an electric mixer.

Add the lemon juice, egg and vanilla to the sugar butter mix and continue whisking till it's fluffy.

Lastly, slowly add the dry ingredients into the wet ingredients bowl, slowly whisking away as you do it.

Preheat oven to 180 degree Celsius.

The dough is sticky, so use butter on your hands and make cookie balls and flatten them on your pan.

Bake for 20 minutes or until the sides brown.

Cool on a wire rack and store in an airtight container.
