Pat dry the chicken with paper towels. Make long parallel cuts in the breast.

Rub the chicken with salt and pepper with your hands, between the cuts as well.

Place ginger juliennes in the cuts and wrap it with cling wrap and let it rest for 2-3 hours.

Put the chicken out of the wrap and into an oven-proof utensil.

Cut the orange in half and place one half under the breast.

Season the chicken with the herbs. Place some onions and garlic pods around the chicken.

Bake the chicken in a preheated oven at 180C for 45 min.

While the chicken bakes, prepare the mashed potatoes.

Boil the potatoes in salty water. Once done, mash them but don't overdo them.

Heat the butter in a pan and add the cream to it.

Add this to the mashed potatoes along with grated nutmeg, salt and pepper. Mix well using a wooden spatula.

Once the chicken is baked, serve it with mashed potatoes and a glass of bourbon.
