  • 1Cucumber (small or medium sized, chopped)
  • 1/2Tomato (chopped)
  • 1/2Onion (chopped)
  • 4 SprigsCilantro
  • 1/2Lemon
  • 1Bread Slice
  • 1/2 CupPeanuts Roasted
  • 1/2 TeaspoonChilli Powder
  • 1 TablespoonCream Cheese
  • To TastePotato Crisps

    Chop the cucumber, tomato, onion and cilantro into small pieces. Throw them together in a fairly large bowl.

    Chop up a slice of bread. I used brown wholewheat bread, since it was the only kind available, but I think this will taste great with multigrain or honey oat bread, as well. Add this to the vegetables.

  3. 3

    Add half a cup of roasted peanuts, half a teaspoon of chilli powder, and a generous dollop of cream cheese (one tablespoon should suffice, but you can be more generous with it, too).

  4. 4

    Mix this well, so the that the cream cheese and chilli powder are spread through the salad evenly.

  5. 5

    Squeeze half a lime over your salad, add cilantro to garnish, and voila! You're done!

  6. 6

    If you're feeling REALLY inspired, then you can add a layer of potato crisps. What has started out as a potentially healthy lunch will take a beating, but the crunchiness is full of win.
