Finely chop all veggies. Chop green apple/carrot into fine sticks.

Mix together all the finely chopped vegetables,salad dressing and a generous amount of grated cheese. Add salt and other fresh herbs as needed.

Slice the zucchini lengthwise. Discard the outermost layer.

Place the filling on the sliced zucchini and roll the slice.

Garnish with coriander and carrot/apple stick.
