
Bacon-Wrapped Mexican Stuffed Pork Loin

Preheat oven to 180°F Celsius.

Mix chopped tomatoes, garlic, onions, jalepenos, and garlic in separate bowl.

Butterly the pork loin, leaving about .5 inches at the wide side uncut. Spread open.

Stuff the tomato mix in the pork loin. Fold pork loin closed.

Wrap bacon around the pork loin. Use toothpicks to keep the bacon around the pork loin and the pork loin closed. Place in baking pan.

Sprinkle paprika and cayenne pepper over pork loin.

Bake at 180°F Celsius for 90 minutes.
