Hello people!!!!! Wish you a Merry Christmas.. It's almost the end of 2015 and holidays are in full swing.. I am going for a trip to a local beach spot..for the Christmas weekend with my sister and boyfriend and his cousins and their girlfriends.. It will be a super crazy weekend.... Fish and booze will be all that we will live on for the next three days.... I love winter though to leave the warm cosy bed is a hell lot of struggle there are a few things that I adore about winter..warm sun, cool breeze, hot coffee, rum, blankets, sweaters, beanie, jaggery, cosy bed, cat cuddles, steamy hot rice with fiery coriander chutney, no baths(he he he he)and the most important cakes and brownies.
In my home cakes and brownies have a place of their own.... People go insane the minute anyone decides to bake.... Everybody is too excited when anything is being baked in my house. I feel so festive smelling the aroma of something baking. This aroma reminds me of my father baking traditional Christmas cake in a big big cake baking oven....the very old version of an electric oven.. one which only bakes cakes.. I used to jump up and down smelling the cake and awaited eagerly to cut into the hot hot cake though I never got a chance to do so as my mother was on guard always when the cake used to cool.. But now the story has changed....my sister has this naughty habit of cutting into hot cakes..... Never to wait for the cake to cool.... I stand on gaurd duty these days.. I have never made tradit...

Ingredients

  1. 1 CupButter
  2. 2 numbersEgg
  3. 3 numbersEgg yolk
  4. 1 CupSugar
  5. 2 tablespoonslime juice Gondhoraj
  6. 1 tablespoonGondhoraj zest
  7. ¾ CupMilk
  8. 2½ CupsAll purpose flour
  9. 2 teaspoonsBaking powder
  10. 180 Gmberries jam Mixed
  11. 1 CupButter
  12. 1½ CupsIcing sugar
  13. teaspoonGreen food colouring ⅛

Cooking Instructions

    Pre-heat the oven to 170°C. Grease the two 8" cake tins and dust with flour.

    Cream together butter and sugar until pale and light.

  3. 3

    Add eggs and yolk one at a time and mix well. Add the gondhoraj lime juice.

  4. 4

    Whisk flour, gondhoraj lime zest and baking powder.

  5. 5

    Alternately add milk and flour mixture. Use a spatula or wooden spoon to just incorporate the flour. DONOT over mix.

    Pour the batter in the tins equally. Bake for 30-40mins or until a knife inserted in the middle comes out clean.

    When the cake has baked let it cool completely. Now whisk together butter and icing sugar(pour it gradually) till soft peaks form and the mixture holds shape. Add the green food color. Mix well.

    Now it's time to layer the cake. Place one slice on the serving plate/stand. Pour the jam over it and spread evenly. Remember not to cover the edge of the cake with jam.

    Place the other slice over it. Press it. You will see the jam to come to the edge. Frost the cake with the green buttercream frosting and decorate as you like.

Namste!! I am Poulami from Kolkata. You can guess that I am Bengali thus by default I have strong affinity towards food. Throughout the day the only logical conversation in a bengali household is about food.. Pet pujo (worshipping the belly/stomach) is our ultimate motive.... I personally love anything made by my maa.. She is a fabulous cook.. She doesn't follow any particular recipe for anything but is always ready to put something delicious on the plate.. I like the way she cooks.. With super speed.. With agility.. She chops..preps..tempers..boils..grinds all in rhythm.. She is quick and organized.. I wish I were more like her.. I too like to cook but due to my work schedule I hardly get any time.. But I have resolved to cook more often thus this blog was created.. Hope you all enjoy!!!!!!
