Ingredients

  1. 1 bagdried Navy Beans
  2. 1/2 cupBBQ (see recipe)
  3. 1/4 cupsmoked pork au ju
  4. 1/2 cupapple cider vinegar
  5. 1beef bullion cube
  6. to tasteSpices: salt, pepper, paprika, cayenne, garlic salt, onion powder, dry mustard, celery salt
  7. 2 lbbacon
  8. 1/2 lbhot sausage
  9. 1onion
  10. 1jalepeno
  11. 1 tablespoonmolasse
  12. 1 pinttomatoes puree
  13. 1/4 cupdijon mustard
  14. 1/2 cupdark brown sugar
  15. 1/4 cupflour (to thicken sausage fat)
  16. 1/2 cupbeef stock

Steps

  1. 1

    Start by cooking the navy beans per the direction on the bag (i usually cook them a little less because they will simmer with the beans for awhile) - set beans aside until the end.

    Sautee chopped bacon, drain and save bacon fat for later use

  2. 2

    Add onions to bacon at halfway point and cook until translucent

  3. 3

    Add spices to taste, keep spices at the ready

  4. 4

    Add chopped jalepeno and garlic, sautee for 2-3 minutes

  5. 5

    Add sausage and cook until meat is not red/raw, drain fat if there is a lot, otherwise keep for flavor and add flour to thicken slightly as we add liquid

  6. 6

    Add BBQ, Au Ju, apple cider vinegar, beef bullion, spices (to taste), tomato puree, beef stock, dijon mustard and dark brown sugar

  7. 7

    If too thick, add more stock, if too thin, add more rue, once desired consistency is reached add beans (beans will naturally thicken the liquid as it simmers), let simmer for 60 minutes on super low heat, serve with any meal!
