Beet and Coconut Samosas

If it's nice, do it twice!
My family absolutely loved the samosas I made last Friday so I decided to make some more with an extremely unconventional filling!
Beet and coconut, grated then pan roasted with some coconut oil and stuffed into paper thin home made samosa wrappers. Crunchy, chewy an slightly sweet. These were then used to scoop up some dates and tamarind sauce, the perfect taste of yum!
Not forgetting the kids, I made some sautéed fresh mushrooms and Parmesan cheese samosas for them and they cleared their plates, even the baby! These were delish!
