Jamun Compote and Homemade Granola Parfait

I grew up climbing jamun trees with my cousins and making chow with them, we had a ball during the summer vacation. Thankfully, there is still one bearing jamun tree I have access to! Oh Happy Day!
I picked quite a bit and thought, what can i do with it other than make wine and chow. Then an idea struck! Jamun is very similar to blueberries in taste, colour and tartness. So I decided to make a jamun compote. All it took was jamuns, lemon juice and sugar, simmered for 30 minutes in its own juices.
Doesn't that just look beautiful and yummy! I layered it with home made granola and Greek yogurt to make a deliciously healthy parfait.
You really need to try this if you can get your hands on some jamun!

Ingredients

30 mins
12-cup
  • 1 cupfreshly picked jamuns
  • 2 tbspsbrown sugar honey or
  • 1 tbsplemon juice

Steps

30 mins
  1. 1

    Deseed jamuns.

  2. 2

    Add jamun pulp, sugar and lemon juice into a saute pan.

  3. 3

    Simmer for 30 mins on low to medium heat until it has reached a jam like consistency.

  4. 4

    Add m sugar and lemon juice depending on the tartness of the jamuns and your taste.
