Green Fig Salad with Eggless Mayonnaise Homemade

I really love green fig salad, it has such a unique taste and is so much healthier than potato salad. For vegetarians like me who prefer eggless mayonnaise, this recipe is as good as it gets!
The green figs are steamed for 15 minutes and mixed with shredded carrot, 1 cm pieces of pink bodi, eggless mayonnaise, paprika, black pepper and honey mustard. A very simple but sumptuous flavour.
Eggless mayonnaise; easier to make than I thought, tastes great and you can flavour it with whatever you like. Milk, cornstarch, vinegar, coconut oil and salt makes for a very simple eggless mayonnaise.

Ingredients

  1. 4 tbspsCornstarch
  2. 1 cupsMilk
  3. 1 tspSugar
  4. 2 tbspsBlack Pepper ground
  5. 1 tbspCoconut oil
  6. 3 tbspsvinegar
  7. 1 tspsalt
  8. 10figs green
  9. 1/2carrot grated
  10. 5 1 cmpink bodi cut in pieces
  11. 1/2 cupmayonnaise eggless
  12. 1/2 tbsppaprika
  13. 1/2 tbsphoney mustard
  14. 1 tspblack pepper
  15. to tasteSalt

Cooking Instructions

    Take cornstarch in a bowl, add in 1/2 of milk and mix well.

    Take remaining milk in a sauce pan and heat up.

    Add in the cornstarch mix in slowly and keep mixing till there is lumps.

    Keep cooking till it gets thick.

    Remove this to a bowl, add in remaining ingredients and use a whisk to whip till creamy.

    Refrigerate it and use.

    If it gets too thick, blend with a little milk until smooth.

    Steam green figs in skin for 15 minute.

    Remove and run under water to cool.

    Peel and cut into 1/4 inch pieces.

    Combine green fig with grated carrot, bodi and the rest of ingredients.

    Chill until ready to serve.
