Steps
- 1
Preheat oven to 400F/200C and line a baking sheet with baking paper. Cut pastry sheet into 4 triangles and, using a butter knife, mark a 1/2 in/1cm border around each triangle, do not cut all the way through. Brush pastry with milk and place on the baking sheet. Bake for 12-15 minutes or until pastry is crisp and golden brown.
- 2
Drain and rinse the kidney beans and place in a bowl with the bell pepper and tomato. Season with salt and pepper, set aside at room temperature until ready to serve.
- 3
Mix beef strips, oil and chili together. Heat a heavy-based skillet over a high heat, add the beef and stir-fry until brown.
- 4
Place a pastry triangle on each plate. Divide lettuce and bean salsa evenly between each triangle and top with beef and a dollop of sour cream. Serve with broiled corn on the cob. NOTE: Squeeze lemon juice over and sprinkle with chopped cilantro for extra flavor.
- 5
Wine Pairings: Cabernet Sauvignon, CSM, Grenache, Malbec, Merlot, Pinot Noir, Sangiovese, Shiraz, Syrah, Tempranillo, Zinfandel
