Fried Chinese Rice and Sweet and Sour Chicken

Cook the rice with garlic, onion, and just a little salt. Once cooked, let it cool in a wide container, then store in the refrigerator until the next day.

In a bowl, beat 1 egg with garlic and pepper powder and salt. Then mix in the chicken breast and thigh pieces, add the cornstarch to coat everything, and refrigerate for at least 1 hour. Set aside. (You can save some chicken for your rice.)

For the rice, chop your vegetables into small pieces. I used: zucchinis, carrots, broccoli, onion, and you can also add bean sprouts, cabbage, bell pepper, etc. It's up to your taste or what you have at home.

Put a little oil and butter in a wok or large non-stick pan. First, fry the grated ginger and onion until translucent, then add the rest of the vegetables. Sauté over medium heat, remove from heat, and set aside.

Now fry the chicken pieces (or shrimp). I season them with garlic and pepper powder and a little soy sauce.

Once fried to your liking, it's time to add your rice. Mix and sauté well. Add soy sauce to taste. Let it fry to your liking as well, add the vegetables, and once everything is incorporated, check the flavor. Add more soy sauce if necessary.

Sweet and Sour Chicken.

Once the chicken is marinated and rested, fry the pieces in deep oil (with enough oil) and place them in a colander to drain any excess oil.

Meanwhile, sauté some onion until transparent, add pineapple pieces, and if you like, dried chiles (I used chiltepin). Once sautéed, add rice or apple vinegar (I used apple vinegar), ketchup, and pineapple juice. Here's the good part. You should taste and adjust to your liking, depending on the amount you're cooking. You can add a little soy sauce for flavor.

Once your sauce has thickened, add the chicken pieces and let it simmer for a few minutes. If you want to thicken it, add a little cornstarch dissolved in water before adding the chicken.

Now, for a side if you don't have Chinese sauce or sriracha. Fry some small green chiles and onion pieces, once fried, add them to a container with soy sauce, lemon juice, and orange juice. Mix and let it rest for at least 1 hour.

You can use this same recipe with spaghetti.
