Lamb Tallow is the oil extracted from the lamb fat. It is highly prized for it's high smoking point and rich nutrient profile. It is widely used in cooking, artisinal soap making and skin care.
It is used for deep frying and roasting Potatoes and different Vegetables to crisp and crunchy texture. It is used in Stews, Curries, for sauteeing, in broths and Pilafs. It is also used as a secret ingredient in the layering of the traditional Dessert Baklava.
Today I made this at home just like my grandmother did. It's a must try one for sure. After every Bakra Eid, this is what I do in my kitchen and render Lamb Tallow from scratch at home sweet home. It does turn out so good. The only thing to be taken care of is the slow cooking process on a low heat. Do not increase the heat. That's it.

Steps

Cut raw Lamb fat into small pieces removing any meat attached to it.

Place them in a thick bottomed pot or deep pan and slow cook on a low until the fat melts for nearly 2 hours or more if needed.

Strain the liquid through a fine mesh sieve or a cheesecloth to remove any solid impurities remaining that are called as cracklings.

Let the liquid cool and solidify. It can be stored in the refrigerator for months together and used as needed.
