Paneer do pyaza is a rich, creamy curry made with soft, creamy paneer and plenty of onions in a delightful mix of spices, herbs, and tomatoes.
The word “Do” means two or double, and “Pyaza” or “Piaza” means onions. This means that onions are added twice in the recipe or that a double quantity of onions is used.
There's also an interesting anecdote related to this dish. It’s said that Emperor Akbar’s courtier, Mullah Do Piyaza, created this recipe accidentally by adding a huge amount of onions to a meat dish. Whether this story is true or not remains a question.
But if you look at the words 'do pyaza,' they literally mean two onions or double the onions. Do pyaza recipes are usually made with meat, but my recipe is a vegetarian version of do pyaza, made with paneer.
In this particular recipe, the onions are doubled as well as added twice at two different stages of cooking. So, there is a generous amount of onions in this dish. If you like onions, then this dish is for you.

First, cut the paneer into cubes.Lightly fry the paneer with a little salt and set it aside.

Heat oil in a pan, lightly fry the cubed onions, and set them aside.

Mix the ground cashews with the yogurt and keep it aside. In the same oil used for frying the paneer, add the tempering ingredients and sauté for 20-25 seconds.
Add the chopped onions and sauté for a minute or two. - 4
Add the ginger-garlic-green chili paste and sauté on low heat for a minute.

Add the tomato puree and cook it well.
Add the turmeric, Kashmiri red chili, and coriander powder and cook well. - 6
Add the yogurt-cashew mixture and cook for 2-3 minutes.

Once the masala starts releasing oil, add the Kitchen King masala, stir well, and then add the fried paneer, slit green chilies, and a little sugar. Mix well.

Add hot water as needed, salt, roasted kasuri methi, the fried onion cubes, and chopped coriander leaves. Mix well.

Lower the heat, cover, and let it simmer until the gravy thickens.

Serve hot with Lachha Paratha, Naan, or Roti.
Tips
Lightly sauté the onion petals on high heat for 1–2 minutes instead of overcooking them.
