Popular regional dishes include Kulthachi Usal (a sprouted curry), Kulith Pith (a thick, spicy soup made from flour), and Kulith Saar (a spiced broth).
📌Kulith Usal ( Hulge Usal in Marathi language) is a traditional Maharashtrian (mainly Konkan and Malvan region) curry made by soaking, sprouting, and cooking the whole beans in a spiced coconut and Goda Masala base.
📌It can be paired with Jowar Bhakri, Bajra Bhakri, Wheat Roti, and Bhaat . And ofcourse, if you have no time to prepare roti or bhakri, it can be enjoyed with Bread - a quick and delicious combo.

Steps

Wash 4 times horse gram and soak in water for 8 hours. Then discard that water and keep aside to sprout. When they sprouted, cook in the pressure cooker until 5 whistles blows on a medium flame.

Take a pan, add oil, mustard seeds and asafoetida. Sauté onions, garlic, and ginger chilli paste.

When onions turns translucent, add tomatoes and cook until turns soft.

Add all masala, salt, goda masala, turmeric powder, red chilli powder, and coriander jeera powder. Sauté till oil release. Add 2 tsp water to avoid burning masalas.

Now add cooked horse gram and stir well. Add water as required to make curry. Add jaggery, grated coconut, and coriander. Mix well Cover it, cook for 2 minutes on a lower flame. Turn off gas. Ready to serve

Serve warm. Here, I served with steamed Basmati rice. This pair is absolutely satisfying mini meal plate.
