Okpa with egg is one of my favourite Enugu street foods. You can smell it before you see it. That warm, earthy aroma pulls you in every time.
I chose it for this challenge because okpa is true street food royalty in Enugu Nigeria & sold hot and fresh on street corners and motor parks. Adding egg makes it even more special, turning this humble Bambara-nut pudding into a filling, protein-packed meal.
My favourite way to enjoy it? Straight off the fire, still steaming, with a cold glass of spicy zobo or a chilled soda. That hot-and-cold combo is what street food memories are made of.

Ingredients

  • 3 cupsbambara nut powder
  • Half cup offresh pepper
  • 1 tablespoonsalt
  • 1 medium sizedonion
  • 1/2 cupcrayfish
  • 1 cuppalm oil
  • 5boiled eggs
  • 3 cupswater

    Wash and blend the pepper, onion, and crayfish together. In a separate clean, dry bowl, pour in the Bambara nut (okpa) powder, add the palm oil, and mix thoroughly.

    Gradually add warm water while stirring continuously to avoid lumps, until the mixture reaches a consistency similar to liquid milk. Pour in the blended pepper mix and salt, then stir until fully combined.

    Scoop the mixture into nylon wraps, cups, or your preferred cooking containers. Add one boiled egg into each portion, then wrap or seal until all the mixture is used up.

    Place the wrapped portions into boiling water and cook on high heat for 45 minutes until firm and fully done. Serve hot and enjoy!

Tips

Aim for a liquid-milk consistency, not too thick, not too watery
Use warm water, added gradually, to avoid lumps
Mix powder and palm oil well before adding water
Don't overfill wraps as mixture expands slightly
Seal wraps tightly to keep water out
Boil on high heat, steady, till done
It's ready when firm and pulls away from the wrap easily
