Amaranthus curry recipe (Thotakura)

Cooking Instructions

1.Firstly fry Urad Dal fryums or pumpkin fryums and keep it aside. 2.Next put a pan pour some oil and put some Urad dal for seasoning 3.Then put finely chopped onions n leave them to fry properly until it becomes light brownish.

4.Then put 1 or 2 spoons of ginger n garlic paste.. Then put Amaranthus leaves (thotakura) and cook deeply

Cover it with a plate to boil nicely

Put a salt and mirchi powder sufficiently as much required

Then the curry turn into dark greenish colour

Then put the fried fryums and off the stove after 5 min........

My husband didn't care for this type of legume, but when I came up with a super spicy version, it's become one of his favorites. Sometimes, he even eats it all up!!!Since the fried bread uses a lot of oil, as does the roux, you may not want to think about the amount of calories. But reducing the oil also will compromise the taste, so I recommend using the full 7 tablespoons of oil. Be sure to serve it piping hot.I recommend using the unsalted type of canned chickpeas.
