Dry Fry Green Beans

I'm not real sure how it gets its name since it is pan fried in oil. But the texture using this method is good. The flavor can be adjusted to your liking, and it's pretty easy and quick. Just prep everything first. You do a lot of stirring during the cooking process and don't have time to prep while you cook, trust me, you will end up with some under cooked, and some extremely over cooked if you do.
This is usually a side dish, but we used it as a main course tonight, mostly due to time limits.
I used some long beans tonight, but regular ole green beans, butter beans, pole beans, all work. Thicker ones take a minute or two longer to cook is all.

Ingredients

2-6 servings
  • 1 poundgreen beans
  • 1/2 poundchicken, pork, shrimp, tofu
  • 3-4 clovesgarlic
  • 1 inchpiece ginger
  • 1-2carrots
  • 1/4-1/2onion
  • 1 1/2 tablespoonfish or soy sauce
  • 1 tablespoonchili sauce (optional, to taste)
  • 1ground black pepper to taste
  • 1salt to taste
  • 3 tablespoonoil for frying

Steps

  1. 1

    Get everything together

    Clean your green beans, either use whole, or cut to a length you prefer.

    Clean your carrots and slice. I just do rounds, but Julianne would be nice.

  4. 4

    Clean and mince your garlic

  5. 5

    Clean and mince your ginger

  6. 6

    Slice/dice your onion, i like thin slices, but do what you like.

    Slice your meat, strips seem to work well in this, if using tofu, medium sized cubes work well, shrimp use as you wish, usually whole, I like to take the shell off.

    Put oil in wok/stir-fry/skillet, put on medium to medium high heat

    Once oil is hot, add all the vegetables, garlic and ginger, first

    Stir fry until the green beans and veggies are just over done. Yes, that's not a typo, winkled, some dark spots. Add the chili sauce, stir it in.

    Add the protein, stir constantly.

    When the protein is just done, add fish/soy sauce.

  13. 13

    Stir until fish/soy sauce is pretty much dried up. Taste, add salt and pepper, stir, taste. Turn off heat.

    Garnish with sesame seeds, green onion, etc.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
