This is a simple but rich strawberry & vanilla cream cake goes well with a cup of tea.
Steps

Pre Heat oven to 180oc. And lightly grease a 7inch baking tin.

Place sugar and butter into a mixing bowl and mix together until thouroughly combined

When combined use electric mixer to make a cream

Add the 3 eggs and mix with a wisk
- 5
When eggs are combined use a electric wisk to thicken the mixture

Add the flour a little at a time to the mixture and wisk

When combined add 1 tsp of Vanilla extract 1 tsp of baking powder and 1 pinch of salt

When creamed pour/scoop the batterr into the pre greased cake tin and place into the oven for 25 mins.

When baked,carefully place the hot tin on top of a cake cooling rack or dry folded tea towl for 15 minutes before removing the cake

When removed from tin carefully turn the cake upside down (so you have a flat top) then slice the cake in half and spread one side with the strawberry jam

Now make the butter cream

Place the icing sugar and butter into a bowl and wisk together, Add 2 tsp of Vanilla extract and wisk again.

Add the Double cream and whip until it is stiff.

Spread the buttercream on the other cake layer and sandwich both cakes together

PLACE THE CAKE ONTO A CAKE BOARD : You can Spread the remainer butter cream on to the top and sides of the cake.

Lightly dust the cake with a little icing sugar and if you like use a fork to squiggle patterns on top (iv chosen ×××)

Now place in a refrigerator for 2 hours or over night.
