One of the first recipes I published on the blog was pork shank with wine. Today, we're sharing another recipe using this part of the pork: Galician-style shank.

One of the first recipes I published on the blog was pork shank with wine. Today, we're sharing another recipe using this part of the pork: Galician-style shank.
Cooking Instructions

Place the washed pork shank in the pressure cooker, add the washed bay leaf, parsley, and some black peppercorns. Cover with water. Very important, do not add salt.

Place the pot on the stove and once it reaches pressure, cook on medium heat for 40 minutes. Cool quickly to open and continue cooking.

Once opened, in the same pot, add the washed leek, whole peeled carrots, and peeled potatoes cut into pieces. Cook uncovered and without pressure on medium heat for about 30 minutes.

When the shank is tender, remove and drain well.

Plate the shank and serve with the potatoes, adding Maldon salt, sweet or spicy paprika to taste, and a generous drizzle of extra virgin olive oil on top.

This pot roast has been honed over the years to suit my taste. I prefer a pot roast with slices of beef, instead of shredded like some recipes, but if you like shredded, you can shred the beef instead. I use a pressure cooker to speed the process up, but if you don't have one, you can roast this traditionally in the oven with a dutch oven (adjustments are in the recipe). I find that 3 cups of total liquid is the right amount for using a pressure cooker but if you're using a dutch oven, add extra water as needed while it cooks. Lance Wilson
